My Favorite Pasta Recipe

 

Mitchell and I have instituted ‘Pasta Sunday’ into our weekly routine.

I could eat pasta every day, but I can’t do that so we’ve made Sunday our designated pasta day. We’ll try different recipes and even got a pasta maker to try our hand at making our own pasta, stay tuned for how that goes. This recipe has been one of my favorites by far.

INGREDIENTS

Olive oil

1 small onion, finely diced

6 cloves of garlic, thinly sliced

6 oz can of tomato paste

1/2 cup dry white wine

3/4 cup heavy cream

Red chilli flakes

Salt & pepper to taste

1 box rigatoni

Grated pecorino romano, for sauce and serving

Directions:

1. Dice onion finely and thinly slice garlic. Heat olive oil in a large skillet and add onions and garlic to cook until softened.

2. Meanwhile, heat large pot of water over high heat for pasta.

3. Add tomato paste to onions and garlic and cook for 2-3 minutes.

4. Once water is boiling, salt generously and cook the rigatoni

5. Add white wine and cook down about 5 minutes until wine has reduced.

6. Stir in cream and season with salt and pepper. Add red chili flakes until you’ve achieved your desired level of spice.

7. Add in 1/2-1 cup of shredded cheese

8. Use slatted spoon or spider strainer to add pasta directly from water, you want some of that starchy pasta water for the sauce.

9. Stir in pasta and serve with cheese. Enjoy!
